Cliffton Dry’s apple blend is hand-harvested and carefully cold-pressed resulting in the highest quality of juice for a clean and refreshing mouth feel. We immediately transfer the juice to stainless steel tanks. Like everything good. We don’t rush it. Once the juice has settled. We test the Brix, add custom champagne yeast, and taste at every stage of the fermentation. Resulting in a low sugar 0.02% to 0.05% sparkling wine made with apples. Our all natural sparkling is fermented in the Charmat Method in a cold-stabilized and organically cleaned winery in The Finger Lakes Region of New York.
