SPARKLING WINE MADE FROM APPLES
Our apples come from orchards that use the highest standards of compost and fertilizers in their soil. The high quality of our fruit starts with excellent, nutrient-rich soil that produces excellent, nutrient-rich apples.
Cliffton Dry picks these apples at the peak of their ripeness. Extensive improvements in farming techniques and technologies have allowed Cliffton Dry, and the fifth-generation farmers we work with, to identify the perfect moment of ripeness to pick the apples. This maximizes the level of nutrients in the fruit.
Our golden natural juice is cold-pressed then immediately transported to stainless steel tanks for fermentation. There is no time delay between harvesting and juicing – which gives Cliffton Dry its fresh, clean light taste.
What makes Cliffton Dry so unique is the variety of premium apples we use, ranging from five to seven varieties a year, depending on the seasons harvest. We conduct a strict tasting process before the apples are pressed so that the high standard and quality of the final product is retained. We use a fresh apple blend that is cold pressed and kept at a specific temperature throughout the blending and tasting process.
After our quality control team leader gives the go-ahead on the taste, the juice is transported in highly advanced, organically cleaned tanks. The close proximity of the facilities allows our quality, flavor and nutrients to be unaffected. The temperature is regulated during transportation so the environment is kept almost constant, ensuring none of the nutrients or flavors are affected.
Upon arrival at the vineyard, the juice is tested by the head wine-maker to ensure nothing was spoiled during transportation. It is then moved to stainless steel, organically cleaned fermentation tanks. Once the juice is settled, another quality and flavor test is carried out. After approval, the head wine-maker adds organic, preservative-free cane sugar to begin the fermentation process.
It is crucial for us at Cliffton Dry not to rush fermentation. We allow our premium, golden juice to ferment naturally. Cliffton Dry is triple fermented. Our wine team and founder tastes and tests the juice in the lab at each cycle to ensure that the sugar is low and that Cliffton Dry is gluten free. The PH level is also tested. The length of the fermentation (2 to 3 months) allows all the sugar to burn off. During this time, our drink’s distinctively soft, round bubbles are naturally formed in the tanks.
A final quality control team tests the product again, right before bottling. From the picking of the harvest to the pressing of the apples to the bottling of Cliffton Dry, we look for consistency and quality. This is a labor of love.
Approval is given and our sparkling apple wine is transported to a state-of-the-art bottling plant located next to the vineyard. All bottles are cleaned and sanitized with the latest technologies. A final filtering while on its way to the bottling line ensures every bottle of Cliffton Dry will be as clear and golden as can be. One last test is done on the carbonation during our bottling process to guarantee that the wonderful effervescence unique to Cliffton Dry has been captured.
